You can purchase our beef by the side, quarter, bundle or package. No minimum amount required. The beef is mostly in 1 – 2.5 lb. pkgs. that are vacuum sealed in heavy duty packaging and frozen for best storage ability. Most cuts are boneless.

Sides and Quarters are sold by hanging weight, plus butcher fees.  Hanging weight is the weight of the side or quarter of beef before it is cut and packaged. Average butcher fees are approximately 95 cents/hanging weight lb. This includes cut, vacuum sealed wrap and frozen under USDA inspection.  OR  70 cents/hanging weight lb.  This includes cut, double wrapped with sealed plastic freezer wrap then freezer paper and frozen under USDA inspection.   Both have labeling on each package.

A side of beef weighs 245 – 265 lbs. hanging weight.  Quarter is 120 – 135 lbs. hanging weight.   All weights are approximate.

 A side of beef will have the following cuts:

  • Steaks: Filet, NY Strips, Delmonico @ 1 inch thick, 2/pkg. approx. 4 – 5 packages of each type
    Sirloin, Round @ 1 inch thick, 1/pkg. approx. 6 – 8 packages of each type Hanger, Skirt, Flat Iron, Flank @ 1/pkg. 1 of each cut
  • Roast: Chuck, Rump, Sirloin Tip, Brisket @ 2 – 2.5 lbs/pkg. approx. 2 – 4 packages of each
  • Other: Stew, Ground beef 1lb/pkg.  Soup bones, Short ribs.  2 – 4 pkg.  Minute steaks 2 – 3 pkgs.
  • Options: Thickness of steaks can be changed. May have Eye of Round roast instead of Minute steaks
    Any cut can be made into ground beef.  Other request will be determined upon the request.

A quarter of beef will have the following cut:  

  • Steaks: Filet, NY Strips, Delmonico @ 1inch thick, 2 steaks/pkg.  2 – 3 packages of each type Sirloin, Round 1/pkg. @ 1 inch thick.  3 – 4 packages of each type Hanger, Skirt, Flat Iron, Flank (You will receive 2 of the four listed)
  • Roast: Chuck, Rump, Sirloin Tip, Brisket @ 2 – 2.5 lbs/pkg.  1 – 3 of each type
  • Other: Stew, Ground beef 1lb/pkg. Soup bones, Short ribs 2 – 2.5 lb./pkg. Minute Steaks 1 -2 pkgs.
  • Options: Any cut can be made into ground beef. May have Eye of Round roast instead of Minute steaks.  Other request will be determined upon the request.

25 lb. Variety Pack (Beef for 2)

  • Includes 10 -12 different cuts of beef from the entire side of the animal.  Which cuts depends on what is available at the time of ordering and weight of packages but this bundle always includes 3 packages of the top end steaks.  It is great for 1 – 2 adults and usually fits in a standard refrigerator freezer. Since meat packages vary in weight the Bundle is approximately 25 lbs.  Cost is $200.

25lb. Variety Pack  (Beef for 2) will include the following cuts:

  • Steaks: Filet, NY Strips, Delmonico @ 1 inch thick, 2 steaks/pkg. 1 package of each type.
    Sirloin, Round @ 1 inch thick, 1 steak/pkg. 1 – 2 packages of each type
  • Chuck Roast: 1 – 2 packages
  • Other: Stew, Ground beef 1lb./pkg. Soup bones, short ribs 2- 2.5lb./pkg. or cross cut shanks
    In addition to the above, you may receive 1 or more of the following: Hanger, Skirt, Flat Iron, Flank, Minute Steak, Rump Roast, Sirloin Tip Roast or Brisket.
